Our wines speak of the land, the parcel, the climate of each vintage and the richness of the grapes. Each one tells its own colourful, aromatic and delicious story. Always surprising, always different and always truly authentic.

REVEALING TERROIRS, A SINGULAR WINERY
History
Our partnership was born in France in 2010 with the desire to create our own wines, sharing the same objective: to produce with passion the wines that we love to drink and share.
The permanent enhancement of the authenticity and uniqueness of each parcel, far from changing tenancies, will be the fundamental principle guiding our style.
For more than 20 years we have been involved in the culture of the vineyard, winemaking and wine ageing.
Grenache is the link between the two of us who are passionate about this variety, but also between the vineyards of our regions of origin, Aragon and the South of France.
Our know-how
The history of the vineyard is hidden, year after year, in the skin of the grape. The subtleties of the terroir, the grape harvest and the climate, are for us so many sources of emotion that we seek to share.
Artisanal
Our wine culture is that of th petit domaine, inspired by the small winegrowers of Burgundy. The imprint of the natural environment must be clear and unambiguous. Our choices are simple, respectful of technical classicism.
Natural
We hand-harvest at the optimum moment, without over-ripening. We sort the grapes if necessary, destemming only partially and use natural yeasts to ensure fermentation without sulphur.
Our yields are around 30 hl/ha.
Oxygenation
Oxygen in the air is an essential tool for winemaking, breathing. It brings fermentation to life and activates the harmonisation and stabilisation mechanisms of our future wines.
Delicacy
Delicacy is a fundamental concept in grape processing. Mechanical operations are gentle with slow pressings and manual extractions by “pigeages”
As far as possible, wine is transferred by gravity.
Maceration
The red wines are macerated for 5 to 6 weeks (long infusions) in order to slowly extract all the richness and personality of the grapes.
Give time to time
We give our wines the time to reach their full potential.
All our wines are matured on the lees, protected from the oxygen, for 8 to 24 months in demi-muids (600 litre French oak barrels)and concrete vats.

ARAGONUM Selección blanco
DOP Calatayud
Garnacha Blanca 100%. Alc/vol 14% a 14,5% – pH 3,25/3,35
Delicate direct pressing rested overnight then racked into ½ muid for fermentation with indigenous yeasts.
Aged on lees with ‘batônages’ for 12 to 24 months. Powerful, racy and rare, this wine is an unexpected expression of Grenache Blanc. Pear, curry and wax notes blend with fresh walnuts. On the palate, the superb acidity carries through to a rich, concentrated and intense finish. The alcohol is well integrated and a very slight touch of tannin adds to the soul of the wine.

ARAGONUM Clásico tinto
DOP Calatayud
Red Grenache 85%, Syrah 15%. Alc/vol 14% to 14,5 % – pH 3,45/3,55
Harvest sorted and destemmed, maceration 6 to 8 weeks. Ageing in concrete vats 85%, demi-muid 15% for 1 to 2 years. Aged in bottle for 18 months. Ripe red fruits strawberry/raspberry, liquorice, smoky touches, spices, a real freshness, good volume in the mouth and very long aromatic persistence.

ARAGONUM Selección tinto
DOP Calatayud
Garnacha Tinta 90%, Syrah 10%. Alc/vol 14,5% a 15,5% – pH 3,50/3,60
Selection of bush vines in the most slatey areas. Minimum ageing of 24 months in demi-muid for the Grenache and in Burgundy barrels for the Syrah. Notes of red fruits present, like syrup. Pencil lead (graphite), black pepper, nutmeg and cinnamon reveal the terroir and the discreet ageing. Freshness on the palate covers a serious concentration of silky tannins. The finish is very long and fruity.

Aoc Châteauneuf du Pape
RARA AVIS red
Grenache noir 70%, Mourvèdre 30% Alc/vol 14.5% to 15% Ecologic wine
Hand-picked, vinified with 50% stems, macerated for 4 to 6 weeks and matured in ½ Muids.
The ferruginous clay soil and the large proportion of big rounded pebbles give this wine great potential.
Candied cherry, bay leaf, thyme blossom, grey pepper and a touch of new leather. Concentrated and rich, with present comforting tannins and a very long finish.
